Step-by-Step Instructions
  1. Grate the zucchini and squeeze out moisture using cheesecloth or a clean towel.
  2. In a mixing bowl, combine the dried zucchini with egg, Parmesan, cornstarch, salt, and pepper. Mix well.
  3. Heat a non-stick skillet over medium heat and add garlic butter.
  4. Form the mixture into two equal-sized patties and cook in the skillet for 3-4 minutes on each side.
  5. Once browned, sprinkle shredded cheddar on one patty and place the other on top to create a sandwich.
  6. Cook for an additional 3 minutes until the cheese melts, then cool for 60 seconds before serving.
