For the Cauliflower Rice
  • 1 head cauliflower or pre-packaged cauliflower rice
  • 1 cup pineapple juice
  • 1 tablespoon lime juice
  • 1 tablespoon lime zest
For the Coleslaw
  • 1 bag sweet and spicy coleslaw mix can use store-bought for convenience
For the Honey Lime Crema
  • 1/2 cup yogurt or sour cream, for a creamy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
For Topping
  • 1 medium avocado can be omitted or replaced with guacamole

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Place cod fillets on the baking dish, brush with melted butter and sprinkle taco seasoning. Bake for 25 minutes until flaky and golden.
  3. In a food processor, pulse cauliflower until rice-sized. Mix in pineapple juice, lime juice, and lime zest. Set aside.
  4. In a mixing bowl, combine coleslaw mix with vinegar, honey, and spices. Let it sit for 10 minutes to meld flavors.
  5. Assemble the bowls with cauliflower rice as base, topped with baked cod and coleslaw.
  6. Drizzle honey lime crema over the bowls, using yogurt or sour cream. Optionally swap with creamy avocado.
  7. Serve immediately, optionally broiling cod for a few minutes for added flavor.
