Ingredients
  

For the Filling
  • 1 pound Ground Beef Substitute with black beans for vegetarian option.
  • 1 cup Shredded Cheddar Cheese Can replace with pepper jack.
  • 1/4 cup Green Onions Chives can be used instead.
  • 1/2 cup Shredded Carrots Substitute with bell peppers.
  • 2 tablespoons Cajun Seasoning Use Creole seasoning for milder flavor.
  • 1 teaspoon Garlic Powder Fresh minced garlic may be used.
For Wrapping and Cooking
  • 1 package Egg Roll Wrappers Use thicker wrappers for crisp texture.
  • 2 cups Vegetable Oil Can substitute with canola or peanut oil.

Method
 

Instructions
  1. In a large skillet over medium heat, add the ground beef and cook for about 7-10 minutes, stirring occasionally until browned. Drain excess grease.
  2. Once the beef is cooked, sprinkle in Cajun seasoning and garlic powder, mixing well to incorporate. Let cool for about 5 minutes.
  3. In a mixing bowl, combine the cooled beef with shredded cheddar cheese, chopped green onions, and shredded carrots. Stir until well combined.
  4. Lay an egg roll wrapper on a clean surface in a diamond shape. Place 2-3 tablespoons of the filling in the center.
  5. Fold the bottom corner over the filling, tuck in the sides, and roll tightly upwards. Seal with water.
  6. Heat vegetable oil in a deep skillet over medium-high heat to 350°F (175°C).
  7. Carefully place the filled egg rolls in the hot oil and fry for about 3-4 minutes until golden brown.
  8. Remove from oil and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
