- In a large skillet over medium heat, add the ground beef and cook for about 7-10 minutes, stirring occasionally until browned. Drain excess grease.
- Once the beef is cooked, sprinkle in Cajun seasoning and garlic powder, mixing well to incorporate. Let cool for about 5 minutes.
- In a mixing bowl, combine the cooled beef with shredded cheddar cheese, chopped green onions, and shredded carrots. Stir until well combined.
- Lay an egg roll wrapper on a clean surface in a diamond shape. Place 2-3 tablespoons of the filling in the center.
- Fold the bottom corner over the filling, tuck in the sides, and roll tightly upwards. Seal with water.
- Heat vegetable oil in a deep skillet over medium-high heat to 350°F (175°C).
- Carefully place the filled egg rolls in the hot oil and fry for about 3-4 minutes until golden brown.
- Remove from oil and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
