  • 1 package Vegan Puff Pastry Choose gluten-free options if needed.
  • 2 tablespoons Dairy-Free Milk For brushing the pastry.
For the Filling
  • 2 cups Blueberries Fresh or frozen works great.
  • 1/2 cup Sugar Consider coconut sugar or agave for natural sweetness.
  • 2 tablespoons Cornstarch (Cornflour) Essential for thickening.
  • 1 tablespoon Lemon Juice Alternatively, use almond extract.
For the Glaze
  • 1 cup Icing Sugar

Method
 

Preparing the Pastry
  1. Preheat your oven to 180°C (fan). Unroll the vegan puff pastry and cut out ghost shapes using a cookie cutter.
  2. Add spooky faces on half of the cutouts and chill them in the fridge for about 5 minutes.
Making the Filling
  1. Combine blueberries, sugar, cornstarch, and lemon juice in a saucepan over medium heat for 5-8 minutes.
  2. Cook until thickened, then cool for 10 minutes.
Assembling the Ghosts
  1. Place plain ghost shapes on a baking sheet. Spoon blueberry filling onto each base ghost.
  2. Brush edges with water and press ghost cut-outs on top to seal.
Baking
  1. Brush tops with dairy-free milk and sprinkle sugar before baking for 15-18 minutes until golden brown.
Adding the Glaze
  1. Mix icing sugar with lemon juice until smooth, drizzle over cooled pies, and let set before serving.
