Ingredients
  

For the Coconut Shortbread Base
  • 125 g Unsalted Butter can substitute with coconut oil for dairy-free
  • 100 g Desiccated Coconut sweetened coconut can be used for extra sweetness
  • 60 g Caster Sugar granulated sugar can be used
  • 150 g Plain Flour use gluten-free flour blend if needed
For the Passionfruit Filling
  • 300 g Sweetened Condensed Milk can be lightened with coconut cream
  • 30 ml Fresh Lemon Juice lime juice can be used as a substitute
  • 250 g Strained Passionfruit Pulp frozen pulp is an alternative
For the Topping
  • 10 g Powdered Gelatine use agar-agar as a plant-based alternative
  • 100 ml Cold Water

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with baking paper.
  2. Melt the unsalted butter in a mixing bowl and combine it with desiccated coconut, caster sugar, and plain flour to form a crumbly mixture. Press this into the baking tin.
  3. Bake in the oven for approximately 15 minutes until lightly golden on the edges. Allow to cool slightly.
  4. In another bowl, mix the sweetened condensed milk, fresh lemon juice, and strained passionfruit pulp until smooth. Pour over the cooled base.
  5. Combine additional strained passionfruit pulp with powdered gelatine, then add warm water and stir until dissolved. Pour over the filling.
  6. Cover the tin and refrigerate for at least 2 hours to allow the topping to set.
