Preparation Steps
- Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with baking paper.
- Melt the unsalted butter in a mixing bowl and combine it with desiccated coconut, caster sugar, and plain flour to form a crumbly mixture. Press this into the baking tin.
- Bake in the oven for approximately 15 minutes until lightly golden on the edges. Allow to cool slightly.
- In another bowl, mix the sweetened condensed milk, fresh lemon juice, and strained passionfruit pulp until smooth. Pour over the cooled base.
- Combine additional strained passionfruit pulp with powdered gelatine, then add warm water and stir until dissolved. Pour over the filling.
- Cover the tin and refrigerate for at least 2 hours to allow the topping to set.
