  • 1 can coconut milk can substitute with coconut cream
  • 3 tablespoons yellow Thai curry paste check for added sugars
Dough
  • 1 batch artisan pizza dough pre-made or homemade
Toppings
  • 1 cup red bell peppers substitutable with yellow or green peppers
  • 1 cup carrots slice into thin ribbons
  • 1 medium red onion sweet onions like Vidalia can be used
  • 2 cups mozzarella cheese substitute with dairy-free cheese for vegan options
  • 1/4 cup cilantro omit if not a fan
  • 2 tablespoons green onions sprinkle on top for garnish

Method
 

Preparation
  1. In a mixing bowl, combine one can of coconut milk with three tablespoons of yellow Thai curry paste. Whisk until smooth and set aside.
  2. Preheat oven to 475°F (245°C). Roll out the artisan pizza dough until approximately 11 inches in diameter.
  3. Spread the curry sauce over the rolled-out dough, leaving a small border for the crust. Arrange sliced red bell peppers, carrots, and red onion on top, then add shredded mozzarella cheese.
  4. Transfer the pizza to the oven and bake for 9 to 11 minutes until the crust is golden brown and the cheese is bubbling.
  5. Let the pizza cool for a couple of minutes, slice, and garnish with cilantro and green onions before serving.
