- In a mixing bowl, combine one can of coconut milk with three tablespoons of yellow Thai curry paste. Whisk until smooth and set aside.
- Preheat oven to 475°F (245°C). Roll out the artisan pizza dough until approximately 11 inches in diameter.
- Spread the curry sauce over the rolled-out dough, leaving a small border for the crust. Arrange sliced red bell peppers, carrots, and red onion on top, then add shredded mozzarella cheese.
- Transfer the pizza to the oven and bake for 9 to 11 minutes until the crust is golden brown and the cheese is bubbling.
- Let the pizza cool for a couple of minutes, slice, and garnish with cilantro and green onions before serving.
