Ingredients

For the Fruit
  • 1 cup Strawberries Fresh and juicy
  • 1 cup Grapes Firm, seedless
  • 1 unit Kiwi Tangy and vibrant
  • 1 cup Other Fruits Optional mix, e.g., blueberries, kumquats, and apple slices
For the Candy Coating
  • 2 cups White Sugar Crucial for glossy coating
  • 1 cup Water Needed for dissolving sugar

Equipment

  • Saucepan
  • candy thermometer
  • wooden skewers
  • bowl for ice bath

Method

Step-by-Step Instructions for Tanghulu
  1. Start by thoroughly washing your chosen fruit, such as strawberries or grapes, and pat them dry. Remove stems or leaves and slice larger fruits like kiwi into bite-sized pieces.
  2. Take your clean wooden skewers and carefully thread 1-2 pieces of fruit onto each skewer, leaving space at one end for handling.
  3. Prepare an ice bath by filling a large bowl with cold water and adding ice cubes. This will cool the coated fruit quickly.
  4. In a medium saucepan, combine equal parts sugar and water. Heat over medium heat, stirring until the sugar dissolves, then boil without stirring to 300°F.
  5. Quickly dip each skewer of fruit into the syrup, ensuring they are well-coated, then transfer immediately to the ice bath.
  6. Place the coated fruit skewers on a tray lined with parchment paper to cool until the candy shell hardens completely.
