Step-by-Step Instructions for Tanghulu
- Start by thoroughly washing your chosen fruit, such as strawberries or grapes, and pat them dry. Remove stems or leaves and slice larger fruits like kiwi into bite-sized pieces.
- Take your clean wooden skewers and carefully thread 1-2 pieces of fruit onto each skewer, leaving space at one end for handling.
- Prepare an ice bath by filling a large bowl with cold water and adding ice cubes. This will cool the coated fruit quickly.
- In a medium saucepan, combine equal parts sugar and water. Heat over medium heat, stirring until the sugar dissolves, then boil without stirring to 300°F.
- Quickly dip each skewer of fruit into the syrup, ensuring they are well-coated, then transfer immediately to the ice bath.
- Place the coated fruit skewers on a tray lined with parchment paper to cool until the candy shell hardens completely.
