- Slice off both the top and bottom of the ripe pineapple, then remove the skin and core, and chop into small chunks.
- Blend the chopped pineapple in a high-powered blender on the ‘smoothie’ setting for about 40 seconds until smooth.
- Line dehydrator trays with silicon rollup sheets and pour the smooth pineapple mixture evenly about 1/4 inch thick.
- Stack trays in the dehydrator at 50°C (122°F) and dehydrate for about 9 hours, or until tacky yet firm.
- Let the dehydrated rollups cool on baking paper, slice them into strips, and store in an airtight container.
