Method
 

Step‑by‑Step Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the diced onion for 5-7 minutes until translucent.
  3. Stir in the carrots and sauté for 5 minutes.
  4. Add vegetable broth and simmer for 15-20 minutes until carrots are tender.
  5. Blend the soup until smooth with an immersion blender.
  6. Mix miso paste in a small bowl with hot soup, then stir back into the pot.
  7. Add coconut milk and soy sauce, and stir to combine.
  8. Season with salt and pepper to taste and warm through.
  9. Serve hot, garnished with green onions and cilantro.
