Step-by-Step Instructions for Easy Vegetarian Lentil Meatballs
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine cooked lentils, flax egg (or large egg), yellow onion, garlic, nutritional yeast, Italian seasoning, sea salt, black pepper, and tomato paste. Pulse until well combined but still textured.
  3. Transfer the mixture to a mixing bowl and gradually add whole wheat breadcrumbs until it holds together well.
  4. Scoop out tablespoon-sized portions and roll them into balls.
  5. Place the meatballs on the baking sheet with space in between each.
  6. Bake the meatballs for 30-35 minutes, flipping halfway through for even browning.
  7. Remove from the oven, let cool for a few minutes, and serve with your choice of sauce or sides.
