Ingredients
  

For the Meatloaf
  • 1 tbsp Butter or ghee or olive oil for Whole30
  • 1 medium Yellow Onion finely diced
  • 2 cloves Garlic minced
  • 1 tbsp Fresh Thyme or less dried thyme
  • 2 lbs Ground Turkey (93/7) or ground chicken/beef
  • 2 large Eggs or flaxseed meal mixed with water for vegan option
  • 1 cup Seasoned Breadcrumbs or almond flour for gluten-free
  • 1 cup Fresh Parsley or other herbs like basil
  • 1 tbsp Kosher Salt
  • 1 tsp Fresh Ground Pepper
  • 2 tbsp Worcestershire Sauce or coconut aminos for Whole30
For the Glaze
  • 1 cup Ketchup no-added-sugar option for Whole30
  • 2 tbsp Balsamic Vinegar or apple cider vinegar
  • 2 tbsp Brown Sugar or maple syrup

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt a tablespoon of butter and sauté the diced onion for about 5 minutes, adding thyme and garlic towards the end.
  3. In a mixing bowl, combine ground turkey, breadcrumbs, eggs, parsley, kosher salt, pepper, Worcestershire sauce, and the cooled onion mixture.
  4. Divide the mixture into eight equal portions and shape into small loaves, placing them on the baking sheet.
  5. For the glaze, mix ketchup, balsamic vinegar, and brown sugar in a bowl and coat the tops of the meatloaves half of the glaze.
  6. Bake for 15 minutes, brush with remaining glaze, and continue baking until the internal temperature reaches 150°F (65°C).
  7. Remove from the oven and let rest for 5-10 minutes before serving.

Notes

Allow sautéed onions to cool before mixing. Use a kitchen scale for even portions and check temperature for doneness.
