- In a large mixing bowl, combine your cooked lentils, fresh spinach, breadcrumbs, grated Parmesan (if using), chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Mix everything thoroughly.
- Add the large egg to the mixture and stir until fully combined. If the mixture feels too wet, gradually add more breadcrumbs.
- Divide the mixture into four equal portions and shape each into an inch-thick patty.
- Heat a tablespoon of olive oil in a skillet over medium heat. Place the shaped burgers into the skillet and cook for 4-5 minutes until golden brown.
- Flip each patty to let the other side cook for an additional 4-5 minutes.
- Remove the patties from the skillet and place them on buns or plates, ready for your favorite toppings.
