Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine your cooked lentils, fresh spinach, breadcrumbs, grated Parmesan (if using), chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Mix everything thoroughly.
  2. Add the large egg to the mixture and stir until fully combined. If the mixture feels too wet, gradually add more breadcrumbs.
  3. Divide the mixture into four equal portions and shape each into an inch-thick patty.
  4. Heat a tablespoon of olive oil in a skillet over medium heat. Place the shaped burgers into the skillet and cook for 4-5 minutes until golden brown.
  5. Flip each patty to let the other side cook for an additional 4-5 minutes.
  6. Remove the patties from the skillet and place them on buns or plates, ready for your favorite toppings.
