Method
 

Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper.
  3. Place the beef short ribs in a large dish and pour the marinade over them. Cover and marinate for at least 30 minutes, ideally overnight.
  4. Heat a tablespoon of oil in a heavy-bottomed pot over medium-high heat and sear the marinated ribs on all sides for 2-3 minutes.
  5. Pour the remaining marinade over the ribs, cover the pot, and roast in the oven for 3 hours.
  6. In a small bowl, mix cornstarch with water to form a slurry. Pour into the pot with cooking liquid and bring to a simmer for about 5 minutes, stirring until thickened.
  7. Brush the glaze over the ribs and broil for 5-10 minutes until caramelized.
  8. Remove the ribs and let them rest for 15 minutes before serving, garnished with green onions and sesame seeds.
