Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 2 minced garlic cloves, cooking until fragrant, about 1 minute.
  2. Add 1 diced green bell pepper and 1 cup of sliced mushrooms. Sauté for 4-5 minutes until softened. Sprinkle in salt, pepper, 1 teaspoon of oregano, and 1 teaspoon of basil.
  3. Stir in 2 cups of cooked quinoa and a can of drained diced tomatoes. Mix thoroughly and heat for about 2 minutes.
  4. Transfer the mixture into a large bowl. Evenly sprinkle 1 cup of shredded mozzarella cheese over the top.
  5. Preheat your broiler to high. Arrange pepperoni slices on top of the cheese layer. Broil for about 3-5 minutes until bubbly and golden.
