- In a medium saucepan, bring 1 ½ cups of water and ½ teaspoon of kosher salt to a boil over medium-high heat.
- Once boiling, stir in 1 cup of pearl couscous. Cover the saucepan, reduce the heat to low, and let it simmer for about 10 minutes.
- Turn off the heat and set aside.
- Remove the lid after 2 minutes and fluff the couscous with a fork.
- In a small dry skillet over medium heat, toast ¼ cup of pine nuts for about 2-3 minutes until golden brown.
- In a large mixing bowl, combine the fluffed couscous, ½ cup of pesto, ½ cup of Parmesan cheese, and the zest of one lemon. Stir thoroughly.
- Season with salt and pepper to taste.
- Transfer to a serving platter and garnish with toasted pine nuts and fresh basil.
