Method
 

Cooking Steps
  1. In a large bowl, combine marinate chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Cover and let marinate for at least 30 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
  3. Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth to create sauce base.
  4. In the same skillet, adjust oil if necessary, fry tomato paste for 2 minutes. Stir in blended tomato mixture and simmer for 10 minutes.
  5. Add garlic powder, ginger powder, and bouillon to the sauce. Return seared chicken to the skillet and simmer covered for 25-30 minutes.
  6. Taste and adjust seasoning. Garnish with fresh parsley or cilantro before serving.
