Cooking Steps
- In a large bowl, combine marinate chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Cover and let marinate for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
- Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth to create sauce base.
- In the same skillet, adjust oil if necessary, fry tomato paste for 2 minutes. Stir in blended tomato mixture and simmer for 10 minutes.
- Add garlic powder, ginger powder, and bouillon to the sauce. Return seared chicken to the skillet and simmer covered for 25-30 minutes.
- Taste and adjust seasoning. Garnish with fresh parsley or cilantro before serving.
