Cheese Filling
  • 1 cup Farmers Cheese Ricotta can substitute.
  • 1 cup Feta Cheese Use a softer cheese if unavailable.
  • 1 cup Mozzarella Cheese Can substitute with provolone.
Topping
  • 6 large Eggs Omit for a vegan option or use a flax egg.
  • 6 tablespoons Butter Use unsalted for better control over saltiness.

Method
 

Dough Preparation
  1. In a stand mixer, pour in milk and water. Add yeast, sugar, and salt; stir gently until bubbly, about 5 minutes.
  2. Gradually add flour while kneading on low speed. Mix until combined, then add oil; knead until elastic and smooth, about 7 minutes.
  3. Cover dough with a towel and let rise in a warm spot until doubled in size, about 1 hour.
Filling and Baking
  1. Combine farmers cheese, feta, and mozzarella in a bowl; mix until creamy.
  2. Punch down the risen dough and divide into 6 pieces; roll each into a 7-inch circle, shaping into a boat.
  3. Fill each dough shape with cheese mixture; cover and let rise for another 30 minutes.
  4. Preheat oven to 425°F (220°C). Bake khachapuri for 15 minutes until edges are golden.
  5. Add an egg and a pat of butter on top of each khachapuri; return to the oven for an additional 5 minutes.
  6. Let cool for a minute, then serve warm.
