Dough Preparation
- In a stand mixer, pour in milk and water. Add yeast, sugar, and salt; stir gently until bubbly, about 5 minutes.
- Gradually add flour while kneading on low speed. Mix until combined, then add oil; knead until elastic and smooth, about 7 minutes.
- Cover dough with a towel and let rise in a warm spot until doubled in size, about 1 hour.
Filling and Baking
- Combine farmers cheese, feta, and mozzarella in a bowl; mix until creamy.
- Punch down the risen dough and divide into 6 pieces; roll each into a 7-inch circle, shaping into a boat.
- Fill each dough shape with cheese mixture; cover and let rise for another 30 minutes.
- Preheat oven to 425°F (220°C). Bake khachapuri for 15 minutes until edges are golden.
- Add an egg and a pat of butter on top of each khachapuri; return to the oven for an additional 5 minutes.
- Let cool for a minute, then serve warm.
