Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish.
  2. Cook lasagna noodles according to package instructions until al dente, then drain and set aside.
  3. In a saucepan, heat olive oil and sauté diced onion until translucent. Add minced garlic and cook until fragrant.
  4. Combine cooked chicken, sautéed onions, spinach, salt, pepper, and seasonings in a mixing bowl.
  5. Blend cottage cheese, egg, heavy cream, dried parsley, and half the mozzarella in another bowl.
  6. Assemble lasagna starting with chicken stock at the bottom, followed by noodles, chicken mixture, cheese mixture, and repeat.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 35 minutes until golden.
  8. Let the lasagna cool for 15 minutes, garnish with parsley, and serve.
