For the Rice
  • 1 cup Rice Jasmine or Basmati
  • 2 cups Beef Broth Vegetable broth can be used

For the Queso Sauce
  • 1 cup Heavy Cream Use low-fat for a lighter option
  • 4 ounces Cream Cheese
  • 1 cup White Cheddar Cheese Swap with any melting cheese
  • 1 cup Monterey Jack Cheese Swap with any melting cheese
  • 1 teaspoon Garlic Powder Optional for more flavor
  • 1 pinch Cayenne Pepper Optional, adjust to taste
For Garnishing
  • 1/4 cup Fresh Cilantro Add more if you love it!
  • 1/2 cup Sour Cream
  • 1 cup Diced Tomatoes

Method
 

Cook Rice
  1. In a medium saucepan, bring beef broth, butter, salt, garlic powder, and paprika to a vigorous boil. Add rice, cover, and simmer for 15-18 minutes.
Cook Steak
  1. Season steak strips with salt, black pepper, garlic powder, paprika, and cumin. Heat olive oil in a skillet and cook the steak for 3-4 minutes on each side.
Prepare Queso Sauce
  1. In a saucepan over low heat, combine heavy cream and cream cheese until melted. Gradually add the cheeses and stir until creamy.
Assemble Dish
  1. Divide rice among bowls, top with sliced steak, and drizzle with queso sauce.
Garnish & Serve
