Step-by-Step Instructions for Spicy Pierogi Pizza
  1. Prepare your pizza crust according to the recipe or roll out a store-bought version. If making from scratch, let the dough rest for 30 minutes.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Thinly slice the russet potatoes using a mandoline slicer. Toss the potato slices with vegetable oil, chipotle pepper powder, and kosher salt.
  4. Spread the coated potato slices in a single layer on your baking sheet. Bake for 25 minutes, flipping halfway until golden and crisp.
  5. Increase the oven temperature to 475°F (245°C) for baking the pizza.
  6. Brush the pizza crust lightly with extra virgin olive oil for richness and crispiness.
  7. Layer the baked chipotle potato chips evenly across the pizza crust.
  8. Sprinkle mozzarella, cheddar, and parmesan cheese over the chips, followed by the chopped bacon.
  9. Bake the assembled pizza for 14–16 minutes until the cheese bubbles and the crust is lightly browned.
  10. Garnish with diced scallions and dollops of sour cream before serving.
