Preparation Steps
- Begin by trimming any excess fat from the chicken thighs, ensuring a clean cut for optimal flavor.
- In a mixing bowl, combine finely minced lemongrass, minced garlic, sliced shallots, fish sauce, soy sauce, brown sugar, black pepper, and optional red chili flakes. Stir until smooth.
- Add the chicken thighs to the marinade, ensuring a full coating. Cover and let it marinate in the fridge for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering, about 2–3 minutes.
- Add the marinated chicken to the skillet in a single layer. Cook undisturbed for about 4–5 minutes until golden brown.
- Flip the chicken and continue to cook for another 4–5 minutes, ensuring it reaches an internal temperature of 165°F.
- Remove from heat and garnish with freshly chopped cilantro. Serve with lime wedges.

Notes
Allow chicken to marinate for at least 30 minutes but no longer than 4 hours for optimal texture. Ensure skillet is hot before adding chicken for the best sear.
