  • 1 teaspoon Black Pepper
  • 1 teaspoon Red Chili Flakes Optional for additional spice.
For Garnish
  • 1/4 cup Cilantro Freshly chopped.
  • 2 wedge Lime For squeezing over the dish.

Preparation Steps
  1. Begin by trimming any excess fat from the chicken thighs, ensuring a clean cut for optimal flavor.
  2. In a mixing bowl, combine finely minced lemongrass, minced garlic, sliced shallots, fish sauce, soy sauce, brown sugar, black pepper, and optional red chili flakes. Stir until smooth.
  3. Add the chicken thighs to the marinade, ensuring a full coating. Cover and let it marinate in the fridge for at least 30 minutes.
  4. Heat vegetable oil in a large skillet over medium-high heat until shimmering, about 2–3 minutes.
  5. Add the marinated chicken to the skillet in a single layer. Cook undisturbed for about 4–5 minutes until golden brown.
  6. Flip the chicken and continue to cook for another 4–5 minutes, ensuring it reaches an internal temperature of 165°F.
  7. Remove from heat and garnish with freshly chopped cilantro. Serve with lime wedges.
