  • 8 oz Canadian bacon Can substitute with turkey bacon or cooked ham
  • 4 whole English muffins Can use day-old sourdough bread
  • 12 large eggs
  • 2 cups whole milk Dairy-free milk can work
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/4 cup fresh parsley Chopped, for garnish
  • 1 cup hollandaise sauce Store-bought or homemade
For the Toppings
  • 2 cups fresh spinach
  • 1 cup sautéed mushrooms
  • 1 cup cooked sausage

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Lightly coat a 9x13-inch baking dish with non-stick spray.
  3. Layer half of the diced Canadian bacon on the bottom of the baking dish.
  4. Distribute half of the English muffin pieces over the bacon.
  5. Repeat with the remaining Canadian bacon and English muffins.
  6. In a mixing bowl, whisk together the eggs, whole milk, onion powder, salt, garlic powder, and black pepper until smooth.
  7. Pour the egg mixture evenly over the layered ingredients.
  8. Cover tightly with plastic wrap and chill for at least 2 hours or overnight.
  9. Remove the plastic wrap, sprinkle paprika on top, and bake for 35 to 40 minutes.
  10. Warm the hollandaise sauce and drizzle over the casserole before serving.
  11. Garnish with chopped parsley and serve hot.
