Step-by-Step Instructions for Vietnamese Lemongrass Chicken
  1. In a mixing bowl, combine finely minced lemongrass, garlic, and shallot with fish sauce, soy sauce, brown sugar, lime juice, black pepper, and optional chili paste. Stir well until all ingredients are thoroughly blended, creating a fragrant marinade.
  2. Add the chicken thighs to the marinade, ensuring they are completely coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Heat a large skillet over medium-high heat and add vegetable oil. Swirl the oil around the pan until shimmering.
  4. Carefully place the marinated chicken thighs into the hot skillet, cooking for approximately 5-7 minutes on each side, until golden-brown and an internal temperature of 165°F (75°C) is reached.
