Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice horizontal pockets into each chicken breast.
  3. Sauté minced garlic in olive oil for 1 minute, then add fresh spinach until wilted.
  4. Mix roasted red peppers, mozzarella, Parmesan, spinach mixture, oregano, basil, salt, and pepper.
  5. Stuff chicken breasts with the filling and secure openings.
  6. Sear the stuffed chicken in the pan for 2-3 minutes on each side.
  7. Transfer to a baking dish and bake for 20-25 minutes until cooked through.
  8. Let rest for a few minutes, optionally drizzle with balsamic vinegar, slice, and serve.
