Preparation Instructions
- Prepare your workspace by lining an 8x8 inch baking tin with parchment paper.
- In a food processor, combine the pitted Medjool dates, dried cranberries, roasted almonds, roasted cashews, and desiccated coconut. Pulse for 1–2 minutes until finely chopped.
- Pour in the melted coconut oil and sea salt. Blend for 30 seconds until the mixture is sticky and holds together.
- Transfer the mixture to the lined baking tin and firmly press down until smooth and evenly distributed.
- Cover the tin and refrigerate for at least 2 hours to firm up the bars.
- Remove from the tin and cut into 12 equal bars.
