  • 150 g Medjool Dates pitted
  • 75 g Dried Cranberries
  • 75 g Roasted Almonds
  • 75 g Roasted Cashews
Texture Ingredients
  • 50 g Desiccated Coconut optional
  • 1 tablespoon Coconut Oil melted
  • 1 pinch Sea Salt

Method
 

Preparation Instructions
  1. Prepare your workspace by lining an 8x8 inch baking tin with parchment paper.
  2. In a food processor, combine the pitted Medjool dates, dried cranberries, roasted almonds, roasted cashews, and desiccated coconut. Pulse for 1–2 minutes until finely chopped.
  3. Pour in the melted coconut oil and sea salt. Blend for 30 seconds until the mixture is sticky and holds together.
  4. Transfer the mixture to the lined baking tin and firmly press down until smooth and evenly distributed.
  5. Cover the tin and refrigerate for at least 2 hours to firm up the bars.
  6. Remove from the tin and cut into 12 equal bars.
