  • 2 large Eggs fully beaten
  • 2 cups Shredded Mozzarella Cheese substitute with fontina if desired

  • 3 ounces Mini Turkey Pepperoni Slices can swap for traditional pepperoni or diced vegetables
  • 1/2 cup Grated Parmesan Cheese pecorino is a tasty alternative

Direction Steps
  1. Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the cottage cheese and eggs until smooth and well-blended.
  3. Stir in the shredded mozzarella cheese, mini turkey pepperoni slices, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper until evenly mixed.
  4. Spread the mixture into the prepared baking dish and sprinkle the remaining turkey pepperoni on top.
  5. Bake in the preheated oven for about 30-35 minutes until set and the cheese is golden brown.
  6. Allow to cool for a few minutes before serving, optionally with marinara sauce.
