- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix the topping: Combine chopped pistachios, honey, rosemary, salt, and pepper in a bowl until blended.
- Prepare the puff pastry: Roll out chilled puff pastry to 1/8 inch thick and cut into 3x3 inch squares.
- Assemble the bites: Place a Brie slice in the center of each square and top with the pistachio mixture. Fold edges over and seal.
- Apply the egg wash: Whisk an egg and brush the tops of the bites with it for a golden finish.
- Bake the bites for 15-20 minutes until puffed and golden brown.
