  • 1 cup Unsalted Roasted Pistachios or use walnuts or pecans
  • 2 tablespoons Honey use high-quality honey
  • 2 tablespoons Fresh Rosemary or use thyme or sage
  • 1 teaspoon Sea Salt adjust to taste
  • 1/2 teaspoon Black Pepper freshly cracked
  • 1 sheet Puff Pastry keep it chilled before use
  • 1 large Egg for egg wash

  • 1/4 cup Cranberries or Pomegranate Seeds

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the topping: Combine chopped pistachios, honey, rosemary, salt, and pepper in a bowl until blended.
  3. Prepare the puff pastry: Roll out chilled puff pastry to 1/8 inch thick and cut into 3x3 inch squares.
  4. Assemble the bites: Place a Brie slice in the center of each square and top with the pistachio mixture. Fold edges over and seal.
  5. Apply the egg wash: Whisk an egg and brush the tops of the bites with it for a golden finish.
  6. Bake the bites for 15-20 minutes until puffed and golden brown.
  7. Cool for a few minutes, then garnish with cranberries or pomegranate seeds before serving.
