For the Chicken
  • 1 whole chicken (3-4 pounds) Patted dry
  • 2 tablespoons olive oil You can use avocado oil as a substitute
  • 1 tablespoon ground cumin Can swap with coriander for a twist
  • 1 tablespoon paprika Smoked paprika can add extra flavor
  • 1 tablespoon garlic powder Fresh garlic can be substituted
  • 2 teaspoons salt Opt for sea salt for better quality
  • 1 teaspoon black pepper White pepper can be used for a milder touch
  • 1 lime fresh lime juice Lemon juice can serve as a substitute
For the Creamy Green Sauce
  • 1/2 cup mayonnaise Greek yogurt can lighten it up
  • 1/4 cup sour cream Plain yogurt works well as a substitute
  • 1 jalapeño Remove seeds for less spice
  • 1 cup fresh cilantro Flat-leaf parsley can be used as an alternative
  • 2 tablespoons lime juice Use lemon juice if needed
  • 2 tablespoons olive oil Neutral oil can be substituted
  • 3 cloves garlic Reduce for a milder taste or swap with garlic powder
  • 1/4 teaspoon salt Balance flavors
  • 1/4 teaspoon black pepper Balance flavors

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, whisk together the olive oil, ground cumin, paprika, garlic powder, salt, black pepper, and fresh lime juice.
  3. Pat the whole chicken dry with paper towels and rub the spice mixture all over the chicken.
  4. Place the chicken in a roasting pan, breast side up, and roast for 1 to 1.5 hours until internal temperature reaches 165°F (75°C).
  5. While the chicken is roasting, prepare the creamy green sauce by blending mayonnaise, sour cream, jalapeño, fresh cilantro, lime juice, olive oil, garlic, salt, and black pepper.
  6. Once the chicken is done, let it rest for about 10 minutes.
  7. Carve the chicken into portions and serve alongside the creamy green sauce.

Notes
