- Preheat your oven to 375°F (190°C). Gather your ingredients and prepare your workspace.
- Wash and chop the cauliflower, bell peppers, onion, and spinach into bite-sized pieces. Sauté the onions and garlic for about 3-5 minutes until fragrant and translucent. Add remaining chopped vegetables.
- Combine sautéed vegetables with raw spinach in a mixing bowl. Add eggs, cream cheese, and Italian seasoning; stir until well integrated.
- Grease a 9x13 inch casserole dish. Pour vegetable mixture into dish, smoothing it out for even baking.
