Preparation Steps
  1. Prep Peppers: Cut tops off banana peppers and remove seeds. Dice tops and set aside.
  2. Cook Sausage: Heat olive oil over medium heat, cook sausage until browned, then set aside.
  3. Sauté Vegetables: In the same pot, sauté onion, bell pepper, and diced banana pepper tops until softened. Add minced garlic last.
  4. Combine Mixtures: Return cooked sausage, add chicken broth and evaporated milk. Bring to a boil.
  5. Incorporate Cheeses: Lower heat, add Parmesan and cream cheese, stirring until melted and smooth.
  6. Simmer: Reduce heat, cover and simmer for 25 minutes.
  7. Cook Orzo: In a separate pot, cook orzo according to package instructions, drain and rinse.
  8. Serve and Garnish: Ladle soup into bowls, garnish with reserved banana pepper slices and extra Parmesan.
