  • 1/2 tsp Onion Powder can be omitted
  • 1/4 tsp Dried Basil
  • 1/2 tsp Oregano
  • 1 tsp Kosher Salt plus more as needed
  • to taste Black Pepper freshly ground preferred
  • 14 oz Crushed Tomatoes canned
  • 32 oz Chicken Broth more if needed
  • 1 cup Water to adjust soup consistency
  • 2 tsp Tomato Paste intensifies tomato flavor
For the Noodles and Greens
  • 6 oz Lasagna Noodles broken up
  • 1 cup Frozen Chopped Spinach boosts nutrition; fresh works too
For Creaminess
  • 1/4 cup Heavy Cream omit for a lighter soup
  • to taste Ricotta Cheese for serving
  • 4 oz Mozzarella Cheese cut in slices
  • optional Parmesan Cheese for serving

Method
 

Step-by-Step Instructions
  1. In a large pot over medium-high heat, add the ground beef and sauté for about 6-8 minutes. Break it up with a wooden spoon as it cooks until brown.
  2. Add the minced garlic, diced onion, garlic powder, onion powder, dried basil, oregano, salt, and black pepper to the beef. Stir and cook for an additional 5 minutes.
  3. Pour in crushed tomatoes, chicken broth, water, and tomato paste. Stir well to combine and bring to a boil. Reduce heat to medium-low.
  4. Stir in the broken lasagna noodles. Cover and simmer for about 10 minutes, stirring occasionally.
  5. Incorporate frozen chopped spinach and heavy cream. Mix thoroughly and cook for an additional 5 minutes.
  6. Ladle the soup into bowls, placing a slice of mozzarella cheese in each. Top with dollops of ricotta cheese and sprinkle parmesan if desired.
