  • 2 teaspoons Salt
  • 1 tablespoon Sugar Activates the yeast.
  • 1 cup Warm water About 110°F.
  • 1 tablespoon Baking soda Used in boiling for crust.
For Flavoring
  • 4 tablespoons Unsalted butter Melted.
  • 2 tablespoons Fresh rosemary Chopped; dried rosemary can be used.
  • 1 cup Parmesan cheese Grated.
For the Cheesy Center
  • 8 oz Mozzarella cheese Cut into 1-inch cubes.
For Topping
  • 1 teaspoon Coarse sea salt Sprinkle on top.

Method
 

Preparation Steps
  1. Combine warm water, instant yeast, and sugar in a large bowl; let sit for 5 minutes until foamy.
  2. Whisk together flour and salt in another bowl, then mix in the yeast mixture until a rough dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Incorporate chopped rosemary and grated Parmesan cheese, kneading for another minute.
  5. Shape dough into a ball, place in a greased bowl, cover with a towel, and let rise for about 1 hour until doubled.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Punch down the dough, divide into 8 portions, flatten each, place mozzarella in center, shape into pretzels.
  8. Boil water and add baking soda; boil each pretzel for 30 seconds, then drain.
  9. Brush with melted butter, sprinkle with sea salt, and bake for 12-15 minutes until golden brown.
