  1. In a medium saucepan, heat sesame oil over medium heat until shimmering. Add ginger and garlic, sauté for 1-2 minutes until fragrant.
  2. Stir in soy sauce, rice vinegar, brown sugar, ketchup, and smoked paprika. Mix cornstarch with water, add to saucepan. Bring to boil and simmer for 3-4 minutes until thickened.
  3. Set aside ½ cup of thickened marinade for later basting. Cool the remaining marinade slightly, then coat chicken thighs in a bowl. Cover and refrigerate for at least 1 hour or up to 4 hours.
