Instructions
- Preheat your oven to 425°F (220°C).
- Trim the tops off the leeks, slice them in half lengthwise, and wash thoroughly.
- Combine light miso with hot water in a small bowl until smooth.
- Heat a skillet over high heat, add olive oil, and sear leeks cut-side down for 4–5 minutes.
- Pour in half of the chicken stock and prepared miso mixture; simmer for 2–3 minutes.
- Add soy sauce, maple syrup, sesame oil, mirin, and minced garlic, then stir gently.
- Add remaining chicken stock, bring to boil, cover, and roast in preheated oven for 20–25 minutes.
- Garnish with lemon zest, chili flakes, and cracked pepper, then serve hot.
