Method
 

Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Trim the tops off the leeks, slice them in half lengthwise, and wash thoroughly.
  3. Combine light miso with hot water in a small bowl until smooth.
  4. Heat a skillet over high heat, add olive oil, and sear leeks cut-side down for 4–5 minutes.
  5. Pour in half of the chicken stock and prepared miso mixture; simmer for 2–3 minutes.
  6. Add soy sauce, maple syrup, sesame oil, mirin, and minced garlic, then stir gently.
  7. Add remaining chicken stock, bring to boil, cover, and roast in preheated oven for 20–25 minutes.
  8. Garnish with lemon zest, chili flakes, and cracked pepper, then serve hot.
