- Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water and bring to a boil. Once boiling, reduce to low, cover, and simmer for about 15 minutes. Fluff quinoa with a fork and let it cool.
- In a small bowl, whisk together the dressing ingredients: juice of 2 limes, 3 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon each of chili powder and cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon smoked paprika. Season with salt and pepper to taste.
- In a large bowl, combine cooled quinoa, 1 cup corn, 1/2 cup diced red onion, and 1 cup diced bell pepper. Stir gently until evenly distributed.
- Pour the dressing over the quinoa mixture and fold it in with a spatula, ensuring everything is well coated.
- Before serving, add 1 diced avocado and 1/4 cup chopped cilantro. Serve chilled or at room temperature.
