Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 1 cup corn fresh, frozen, or canned
  • 1/2 cup red onion diced
  • 1 cup bell pepper diced
  • 1 unit avocado diced, add before serving
  • 1/4 cup cilantro chopped
For the Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 3 tablespoons olive oil or avocado oil
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste

Method
 

Cooking Instructions
  1. Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water and bring to a boil. Once boiling, reduce to low, cover, and simmer for about 15 minutes. Fluff quinoa with a fork and let it cool.
  2. In a small bowl, whisk together the dressing ingredients: juice of 2 limes, 3 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon each of chili powder and cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon smoked paprika. Season with salt and pepper to taste.
  3. In a large bowl, combine cooled quinoa, 1 cup corn, 1/2 cup diced red onion, and 1 cup diced bell pepper. Stir gently until evenly distributed.
  4. Pour the dressing over the quinoa mixture and fold it in with a spatula, ensuring everything is well coated.
  5. Before serving, add 1 diced avocado and 1/4 cup chopped cilantro. Serve chilled or at room temperature.

Notes
