  • ¼ cup fresh herbs like parsley or dill
For the Tzatziki
  • 1 cup Greek yogurt or coconut yogurt for dairy-free
  • 1 unit grated cucumber squeezed to remove excess moisture
  • ½ unit lemon juice juice of half a lemon
  • 1 clove garlic minced
  • 1 tablespoon chopped dill

For the Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

Step-by-Step Instructions
  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, minced garlic, lemon juice, oregano, and thyme. Season with salt and pepper. Coat the sirloin steak with the marinade and marinate for at least 30 minutes.
  2. Make the Tzatziki: In a bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill. Season with salt and pepper. Stir well and refrigerate.
  3. Prepare the Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper. Set aside.
  4. Cook the Steak: Heat a skillet over medium-high heat, add marinated steak, and sear for 4-5 minutes on each side until desired doneness. Let rest for 5 minutes before slicing.
  5. Assemble the Bowl: Layer cooked grains in a bowl, top with sliced steak, cherry tomatoes, diced cucumber, Kalamata olives, crumbled feta, and fresh herbs.
