Cooking Steps
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss diced sweet potatoes with olive oil, garlic powder, salt, and pepper, and spread them on half of the baking sheet.
- In the same bowl, add chicken breasts with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper. Mix well.
- Place the coated chicken breasts on the other half of the baking sheet.
- Roast in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes become tender.
- Melt butter in a skillet over medium heat and toast pecans for 3-4 minutes.
- Garnish chicken and sweet potatoes with toasted pecans and parsley before serving.
