For the Sweet Potatoes

  • 2 tablespoons Butter Can use margarine or vegan butter as substitutes.
  • 1/2 cup Chopped Pecans Can substitute with walnuts or almonds.

Method
 

Cooking Steps
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with olive oil, garlic powder, salt, and pepper, and spread them on half of the baking sheet.
  3. In the same bowl, add chicken breasts with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper. Mix well.
  4. Place the coated chicken breasts on the other half of the baking sheet.
  5. Roast in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes become tender.
  6. Melt butter in a skillet over medium heat and toast pecans for 3-4 minutes.
  7. Garnish chicken and sweet potatoes with toasted pecans and parsley before serving.
