Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and prepare a 9x5 loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine almond flour, granulated sweetener, baking powder, and salt. Whisk until evenly mixed.
  3. In a separate bowl, whisk together plain yogurt or coconut cream, lemon juice, eggs or flax eggs, and lemon zest until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until a smooth batter forms.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Place the loaf pan in the preheated oven and bake for 50 minutes. Check for doneness with a toothpick.
  7. Let the loaf cool in the pan for about 10 minutes, then remove it and cool completely on a wire rack.
