  • 200 gr Couverture Dark Chocolate 70% cocoa for intense flavor
  • 180 ml Full Cream / Whole Milk for a creamy base
  • 14 gr Gelatine Powder for stabilization
  • 1 tbsp Cold Water to dissolve gelatine
  • 360 ml Thickened / Heavy Cream 30% fat minimum for texture
Optional Variations
  • 280 gr White Chocolate for a sweeter version
  • 270 gr Milk Chocolate for balance of sweetness
  • Flavor Infusions like vanilla or coffee

Method
 

Preparation Steps
  1. Finely chop the dark chocolate and place it in a heat-proof bowl.
  2. Heat the whole milk in a saucepan until it simmers.
  3. Combine gelatine powder with cold water and let it thicken.
  4. Stir in the gelatine mixture into the hot milk until dissolved.
  5. Pour the milk mixture over the chocolate, let sit for 2-3 minutes.
  6. Stir gently until the mixture is smooth and glossy.
  7. Slowly add the cold thickened cream and mix until homogeneous.
  8. Pour into a shallow dish, cover, and refrigerate for 8-10 hours.
  9. Once set, transfer to a piping bag or serve as desired.
