Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9-inch cast iron skillet.
  2. In a large mixing bowl, whisk together the yellow cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, honey, eggs, and melted butter until smooth.
  4. Gently pour the wet mixture into the dry ingredients and fold together carefully.
  5. Pour the batter into the skillet and top with sliced jalapeños.
  6. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  7. While baking, whisk together lime juice, zest, and powdered sugar for the drizzle.
  8. Once baked, cool in the skillet for 10-15 minutes then drizzle with lime glaze.
