Step-by-Step Instructions
  1. In a large mixing bowl, combine grated onion, grated potatoes, eggs, sea salt, black pepper, and flour. Stir until well blended.
  2. Heat a non-stick skillet over medium heat and drizzle in olive oil, heating for about 2 minutes.
  3. Scoop spoonfuls of the batter into the skillet, cooking each pancake for 2-3 minutes until golden brown. Flip and cook the other side for an additional 2-3 minutes.
  4. In a separate bowl, combine tomatoes, dill, and half of the mozzarella. Mix well.
  5. Place cooked pancakes on a baking sheet, top with tomato-cheese mixture, and sprinkle remaining mozzarella. Bake at 400°F for 15 minutes.
