- Preheat your oven to 425°F (220°C) to ensure it’s hot and ready for baking your Greek Chicken Gyros.
- In a large bowl, combine the chicken thighs, olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano. Allow to marinate for at least 1 hour, preferably overnight.
- Thread the chicken onto a Vertical Gyro Spit Plate, alternating the direction of each thigh for even roasting.
- Pour one cup of water or chicken stock into the base of the gyro plate.
- Place the gyro in the oven and bake for 75 to 90 minutes, checking for doneness.
