Step-by-Step Instructions for Greek Chicken Gyros
  1. Preheat your oven to 425°F (220°C) to ensure it’s hot and ready for baking your Greek Chicken Gyros.
  2. In a large bowl, combine the chicken thighs, olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano. Allow to marinate for at least 1 hour, preferably overnight.
  3. Thread the chicken onto a Vertical Gyro Spit Plate, alternating the direction of each thigh for even roasting.
  4. Pour one cup of water or chicken stock into the base of the gyro plate.
  5. Place the gyro in the oven and bake for 75 to 90 minutes, checking for doneness.
  6. Remove from the oven and let it rest for a few minutes before slicing into thin strips.
  7. Serve the sliced chicken in warm pita bread topped with tzatziki, fresh tomatoes, cucumber slices, and crumbled feta.
