Method
 

Step-by-Step Instructions
  1. Unroll your thawed puff pastry on a sheet of parchment paper and let it sit for about 5 minutes to soften slightly.
  2. Evenly spread a generous layer of fig preserves across the puff pastry, leaving a small border around the edges.
  3. Sprinkle crumbled goat cheese over the preserves, followed by a light sprinkle of brown sugar and fresh thyme.
  4. Carefully start from one edge and tightly roll the pastry into a log shape, sealing the seam.
  5. Once rolled, place the log in the freezer for about 20 minutes.
  6. Remove the chilled log from the freezer and cut it into ½ inch pinwheels.
  7. Arrange the sliced pinwheels on a baking sheet and brush the tops with an egg wash.
  8. Bake for 15-20 minutes at 400°F until puffed and golden brown.
  9. Let cool slightly, and serve warm, garnished with more brown sugar or fresh thyme if desired.
