Method
 

Prepare the Tart
  1. Process Oreo cookies into fine crumbs. Combine with melted butter and salt until well mixed. Press into tart tin and freeze for 15 minutes.
  2. Melt dark chocolate in a heatproof bowl. Heat whipping cream and sugar until steaming, then combine with chocolate.
  3. Pour hot cream over chocolate, let sit for 1-2 minutes, then stir until smooth.
  4. Pour ganache into chilled crust, spread evenly, and tap to remove air bubbles.
  5. Chill tart in refrigerator for at least 6 hours or overnight.
  6. Garnish cooled tart with pistachios, raspberries, and sea salt, then slice and serve.
