Prepare the Tart
- Process Oreo cookies into fine crumbs. Combine with melted butter and salt until well mixed. Press into tart tin and freeze for 15 minutes.
- Melt dark chocolate in a heatproof bowl. Heat whipping cream and sugar until steaming, then combine with chocolate.
- Pour hot cream over chocolate, let sit for 1-2 minutes, then stir until smooth.
- Pour ganache into chilled crust, spread evenly, and tap to remove air bubbles.
- Chill tart in refrigerator for at least 6 hours or overnight.
- Garnish cooled tart with pistachios, raspberries, and sea salt, then slice and serve.
