  • 1 lb Tenderloin or Sirloin Steak Select tender cuts for juicy bites

Cowboy Butter
  • 1/2 cup Salted Butter Use unsalted if controlling sodium
  • 3 cloves Garlic Minced
  • 1 tsp Paprika Smoked for extra flavor

  • 1 tbsp Worcestershire Sauce Or soy sauce
  • 1 tbsp Brown or Dijon Mustard For tanginess

Buttery Smashed Potatoes
  • 2 lbs Yukon Gold Potatoes Or russet for fluffier texture
  • 1/2 cup Heavy Cream Whole milk for a lighter option

Method
 

Instructions
  1. Prep Potatoes: Peel and chop Yukon Gold potatoes, cover with cold water in a pot, boil and simmer for about 15 minutes until fork-tender. Drain and set aside.
  2. Cook Steak: Season steak bites with salt and pepper, heat butter and olive oil in a skillet, brown steak bites for 5 minutes until medium-rare. Remove from heat.
  3. Mash Potatoes: Return potatoes to pot, add heavy cream and additional butter, mash until creamy, season with salt and pepper, cover to keep warm.
  4. Make Cowboy Butter: In a saucepan, melt butter, add garlic, paprika, pepper, Worcestershire sauce, and mustard, stir until combined and slightly thickened. Fold in green onions.
  5. Serve: Place smashed potatoes on plates, top with steak bites, drizzle with cowboy butter, serve fresh salad on the side.
