- Prep Potatoes: Peel and chop Yukon Gold potatoes, cover with cold water in a pot, boil and simmer for about 15 minutes until fork-tender. Drain and set aside.
- Cook Steak: Season steak bites with salt and pepper, heat butter and olive oil in a skillet, brown steak bites for 5 minutes until medium-rare. Remove from heat.
- Mash Potatoes: Return potatoes to pot, add heavy cream and additional butter, mash until creamy, season with salt and pepper, cover to keep warm.
- Make Cowboy Butter: In a saucepan, melt butter, add garlic, paprika, pepper, Worcestershire sauce, and mustard, stir until combined and slightly thickened. Fold in green onions.
- Serve: Place smashed potatoes on plates, top with steak bites, drizzle with cowboy butter, serve fresh salad on the side.
