Step‑by‑Step Instructions for Spicy Bravas Sauce
  1. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add one finely chopped yellow onion and sauté for about 5 minutes.
  2. Introduce 2 minced garlic cloves to the pan, continuing to sauté for an additional 1-2 minutes.
  3. Sprinkle in 2 tablespoons of all-purpose flour, stirring constantly for 2-3 minutes.
  4. Add 1 can of chopped tomatoes, along with 1 teaspoon of sweet smoked paprika and ½ teaspoon of spicy paprika. Cook for about 3-5 minutes.
  5. Pour in 1 cup of vegetable stock and 2 tablespoons of sherry vinegar, stirring well to combine. Bring to a gentle simmer.
  6. Reduce the heat to low and let the sauce simmer for approximately 10 minutes, stirring frequently.
  7. Remove from heat and use an immersion blender to puree the sauce until smooth.
