  • ¼ cup brown sugar can substitute honey or coconut sugar
  • ¼ cup ketchup homemade works too
  • ½ teaspoon smoked paprika or regular paprika
  • 1 tablespoon cornstarch or arrowroot powder
For the Chicken
  • 2 pounds chicken thighs boneless, skinless
  • vegetable oil for greasing the grill

Step-by-Step Instructions
  1. Make the Marinade: Heat a medium saucepan over medium heat, add sesame oil, ginger, and minced garlic. Cook until fragrant, then add soy sauce, rice vinegar, brown sugar, ketchup, smoked paprika, and a cornstarch-water mixture. Bring to a boil and simmer until thickened.
  2. Marinate the Chicken: Reserve ½ cup of marinade for basting. Coat chicken thighs in remaining marinade, cover, and refrigerate for at least 1 hour (4 hours preferred).
  3. Prepare the Grill: Preheat the grill to medium-high heat. Oil the grates with vegetable oil.
  4. Grill the Chicken: Remove chicken from marinade, grill for 4-6 minutes per side, basting with reserved marinade and ensuring it reaches an internal temperature of 165°F.
