Ingredients
  

Vinaigrette
  • ¼ cup olive oil substitute with avocado oil for a fruity twist
  • 2 tablespoons white balsamic vinegar can use apple cider vinegar for bolder flavor
  • 1 tablespoon whole grain mustard Dijon mustard can be used for smoother texture
  • 1 clove fresh garlic substitute with garlic powder if needed
  • 1 whole lemon include zest
  • 1 teaspoon sugar or honey/agave syrup as alternative
  • ½ teaspoon ground coriander seed ground cumin can be used as substitute
  • to taste teaspoon salt start with ½ tsp and adjust as needed
Salad
  • 4 cups coarsely chopped fresh herbs mix herbs to preference (dill, cilantro, parsley, mint, basil, tarragon)
  • 1 medium red onion thinly sliced, can substitute with green onions
  • ½ cup chives thinly sliced, or substitute with green onions
  • 6 cups fancy lettuce such as baby arugula and radicchio
  • 1 cup Cara Cara oranges or tangerines, sliced
  • ½ large Persian cucumber cut into ½ inch medallions
  • ½ cup goat cheese crumbles or shaved aged Gouda, can omit for vegan option
  • ¼ cup pralines or sweet almond slivers, for added crunch

Method
 

Vinaigrette Preparation
  1. In a medium bowl, combine olive oil, white balsamic vinegar, whole grain mustard, crushed garlic, juice and zest of lemon, sugar, ground coriander, and salt. Whisk until well blended and emulsified, about 1-2 minutes.
Combining Ingredients
  1. In a large mixing bowl, add coarsely chopped fresh herbs, sliced red onion, and chives. Toss in fancy lettuce and gently mix to distribute ingredients evenly.
Topping the Salad
  1. Layer sliced Cara Cara oranges or tangerines on top, followed by medallions of Persian cucumber. Crumble goat cheese over the salad.
Adding Crunch
  1. Sprinkle pralines or sweet almond slivers over the salad for added crunch and sweetness.
Dressing the Salad
  1. Drizzle the homemade lemon vinaigrette generously over the salad. Toss gently to coat all ingredients evenly.
