  1. Begin by thinly slicing the brie cheese and the crisp apples—aim for about 1/4 inch thick to ensure they melt and soften nicely.
  2. Take two slices of whole grain bread and spread softened butter generously on one side of each. Layer brie, apple slices, and spoon cranberry sauce on the unbuttered side of one slice.
  3. Place a skillet on medium heat and warm for about 2 minutes until hot enough for a golden-brown crust.
  4. Cook the assembled sandwich in the skillet for 4-5 minutes until golden brown on one side, then flip and cook for another 4-5 minutes.
  5. Remove from skillet, drizzle with honey, sprinkle with thyme if desired, and cut sandwich in half to serve.
