Preparation Steps
- Preheat your oven to 375°F (190°C).
- Wash and slice the zucchinis in half lengthwise. Scoop out the flesh, leaving a quarter-inch outer layer.
- In a skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute.
- Add ground meat to the skillet. Cook for 5-7 minutes until browned and cooked through.
- Stir in diced tomatoes and Italian herbs. Let simmer for 3-4 minutes.
- Spoon the meat mixture into the hollowed zucchinis and sprinkle with cheese.
- Arrange filled zucchini on a baking sheet and bake for 25-30 minutes until tender.
- Remove from oven and let cool for a few minutes before serving.
