  • 1 lb Ground Meat Beef, chicken, or turkey
  • 1 cup Tomatoes Diced, fresh or canned
  • 1 cup Cheeses Mozzarella and parmesan mix
  • 1 tbsp Italian Herbs Oregano and basil
Zucchini
  • 4 medium Zucchini Firm, fresh
Cooking
  • 2 tbsp Olive Oil For sautéing

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchinis in half lengthwise. Scoop out the flesh, leaving a quarter-inch outer layer.
  3. In a skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute.
  4. Add ground meat to the skillet. Cook for 5-7 minutes until browned and cooked through.
  5. Stir in diced tomatoes and Italian herbs. Let simmer for 3-4 minutes.
  6. Spoon the meat mixture into the hollowed zucchinis and sprinkle with cheese.
  7. Arrange filled zucchini on a baking sheet and bake for 25-30 minutes until tender.
  8. Remove from oven and let cool for a few minutes before serving.
